I cant really offer that good of advice as I don't have any experience with any of the other models listed, but I would recommend the KP-05 just in general. It seems very solid, well built, and decently accurate for stock. It also kicks hard enough (on propane) that if you aren't gripping the pistol firmly with a good stance you can lose a bit of accuracy on the first maybe 5-6 shots. I would imagine co2 would kick harder but I've never actually ran mine on co2.

A real steel STI 2011 has slightly thicker grip (37mm) which I find to be a touch too wide for me. However, a single-stack STI Trojan that I have has measurements almost identical to your KP-05: 33mm grip and 68mm trigger/safety distance.
I'll take as much kick as I can get, it helps to at least simulate the recoil I'm getting in live fire. I'm sure this would stress the gun a lot harder than shooting GG, but with a KP-05 or KP-07 I will be able to get spare parts: my Tanfoglio Limited Custom kicks almost as hard as a .22, but I'm on my third pistol since there are no parts available.
I was told that the newer model of KP-07 has better CO2 mags, the new ones have a slim basepad. Does KP-05 also have an older and newer version of their mags?
